Recipe: Prosciutto and Arugula Toast

For weekend brunch, I transformed one of my favorite pizza toppings into an open-faced sandwich. It was very easy for me to make, and very satisfying for everyone else.

Ingredients

1 large slice dense whole wheat bread
1-2 thin slices dry-cured ham (prosciutto, speck, jambon, etc.)
50g spreadable goat cheese (or cream cheese)
4-5 sun-dried tomatoes in oil (or cherry tomatoes)
arugula

Servings: 1

How to prepare prosciutto and arugula toast

  1. Toast the bread in a toaster or in the oven.
  2. After it cools slightly, spread with the goat cheese.
  3. Arrange slices of ham on top. Scatter with arugula and then add a few sun-dried tomatoes. Drizzle with a little oil from the tomatoes.
  4. Cut the slice into pieces widthwise.
