My brother is going on vacation to Greece and I did a little exploration of Greek cuisine to recommend some dishes he shouldn't miss. One of them caught my eye because it's very simple and quick and goes well in this heat. It's actually the Greek version of Italian bruschetta...
Ingredients
1 bread roll
2 tomatoes
2 slices sheep or goat feta cheese (or similar white cheese)
oregano
pepper
olive oil
chili flakes (optional)

How to prepare tomato and feta cheese toast (dakos)
- Cut the roll in half and toast it lightly either in the oven or in the bread toaster.
- Grate the tomato on the large side of a grater (cut it in half and grate it holding the flesh side toward the grater; at the end you'll be left with just the skin, which you discard). Crumble or grate the feta cheese.
- Put a thick layer (about a finger thick) of tomatoes on each half roll, juice and all - this will soak into the dry bread and soften it slightly. Then sprinkle a generous layer of feta cheese. Drizzle a little olive oil over the cheese.
- Season with oregano, pepper, and chili. Add salt only if the cheese isn't salty!
- Let it sit for 5 minutes to soften the bread, then serve.
