Avocado and Shrimp Toast
Ingredients
5 slices whole wheat bread
finely chopped green onion (chives)
Grilled Shrimp
15 shrimp
2 tablespoons olive oil
1 tablespoon lemon/lime juice
1/4 teaspoon chili flakes
salt
Guacamole
1 avocado
1 tablespoon chopped onion
1 tablespoon olive oil
1 tablespoon lime juice
1 tablespoon water
6 sprigs of parsley
salt

How to prepare avocado and shrimp toast
- Clean the shrimp. Sprinkle with salt and chili. Add the lemon juice and oil. Mix well. Let marinate for 10-15 minutes.
- Meanwhile, heat the grill pan very well.
- Place the shrimp on the grill, spaced apart, and cook for 2 minutes per side. Transfer to a bowl.
- Pour the remaining marinade from the shrimp into a small pan and bring to a boil. Pour over the shrimp and mix. Let cool. Slice the shrimp into rounds.
- Toast the bread in the oven, on the grill pan, or in a toaster. Let it cool as well.
- For the guacamole, blend all ingredients in a food processor until they become a smooth, creamy paste.
- Spread each slice of bread with avocado cream. Sprinkle with shrimp rounds, then sprinkle with chopped green onion.
