Avocado and Shrimp Toast

Ingredients

5 slices whole wheat bread
finely chopped green onion (chives)

Grilled Shrimp

15 shrimp
2 tablespoons olive oil
1 tablespoon lemon/lime juice
1/4 teaspoon chili flakes
salt

Guacamole

1 avocado
1 tablespoon chopped onion
1 tablespoon olive oil
1 tablespoon lime juice
1 tablespoon water
6 sprigs of parsley
salt

How to prepare avocado and shrimp toast

  1. Clean the shrimp. Sprinkle with salt and chili. Add the lemon juice and oil. Mix well. Let marinate for 10-15 minutes.
  2. Meanwhile, heat the grill pan very well.
  3. Place the shrimp on the grill, spaced apart, and cook for 2 minutes per side. Transfer to a bowl.
  4. Pour the remaining marinade from the shrimp into a small pan and bring to a boil. Pour over the shrimp and mix. Let cool. Slice the shrimp into rounds.
  5. Toast the bread in the oven, on the grill pan, or in a toaster. Let it cool as well.
  6. For the guacamole, blend all ingredients in a food processor until they become a smooth, creamy paste.
  7. Spread each slice of bread with avocado cream. Sprinkle with shrimp rounds, then sprinkle with chopped green onion.
