This is the raw vegetable salad from yesterday, from the opening of Casa Bio. I fell in love with its colors as soon as I saw it on the table, and before I even realized I was eating raw cauliflower, it was already on my list of favorite salads. So I invite you to try it and tell me what you think.
The dressing I used is different - Mrs. Lidia only used soy milk cream and lemon juice. But I like adding herbs and flavors to any dish, and I think this dressing is a plus. Anyone who wants a lighter version of the salad can easily omit the mayonnaise from the dressing - it has enough flavors to remain tasty.
Ingredients
300g cauliflower florets
250g broccoli florets
100g red cabbage
3 fresh cucumbers
1 large carrot
1 slice of celery root (about 30g)
1 serving of buttermilk dressing
How to prepare raw vegetable salad
- Cut the cauliflower and broccoli into small pieces. Grate the carrot and celery root using the large holes of a grater. Dice the cucumbers. Shred the cabbage finely. Mix the vegetables and sprinkle a little salt over them (about 1/2 teaspoon).
- Serve the salad with the buttermilk dressing, each person adds as much as they like.
* for a vegan version, you can replace the buttermilk in the dressing with soy milk cream and omit the mayonnaise
