Hello again 😊 It feels like so much time has passed since I last posted on the site... It's like I've been away for a month. So I'm starting with a simple fall recipe, nothing special, but something to help you make the most of the vitamin-rich vegetables of autumn. Cabbage and carrots are obviously the stars, but radishes are also very good during this time - they deserve to be put in salads.
Ingredients
1/2 large white cabbage
4-5 radishes (red, white, or black)
1 small carrot
1 small slice of celery root (optional)
salt, pepper
3 tablespoons olive oil (or grapeseed oil)
1 tablespoon lemon juice (or vinegar)
How to prepare cabbage salad with radishes and carrots
- Grate the cabbage or slice it finely with a knife. I use a vegetable peeler with a double serrated blade (see photo). Grate the radishes and carrot (and celery root if using) and lightly squeeze out the water.
- Mix the vegetables and sprinkle with salt and pepper. Taste now to see if it's okay. Pour the oil mixed well with lemon juice on top.
- Serve immediately, because the vegetables, being cut very finely, will soften quickly.
