Raw Vegetable Salad with Mozzarella

Ingredients

2 handfuls of baby spinach leaves (or lettuce, arugula, radicchio, etc.; or a mix of all these)
1 small carrot
1 small red beet
2 tomatoes (or a few cherry tomatoes)
5-6 mozzarella balls
oregano

Black Olive Dressing

200g sour cream
10 black olives
1/2 teaspoon dried green onion
1/2 teaspoon dried onion flakes
1/2 teaspoon dried parsley
1/4 teaspoon granulated garlic
1 good pinch of ground black pepper
1 tablespoon oil
salt

Servings: 2 salads

How to prepare raw vegetable salad with mozzarella

  1. Prepare the dressing: Grind all the dried ingredients for the dressing (green onion, onion, parsley, garlic, pepper) in a spice grinder. Pour over the sour cream. Add the very finely chopped olives and oil and mix well. Season with salt.
  2. Tear or cut the spinach/salad leaves and place in a bowl. Grate the carrots and beet into matchsticks on top. Gently mix with your hands.
  3. Divide the salad between two plates. Arrange tomato rounds/slices and mozzarella on top. Sprinkle generously with oregano.
  4. Serve with dressing and a slice of toasted bread.
