Red Cabbage Salad with Smoked Chicken Breast

A simple and delicious salad; my mother found the recipe in a practical advice book. The ingredient quantities are indicative - I wrote down exactly what I used, but you can eyeball it and add more of what you like. For example, I replaced the bell peppers from the original recipe with radishes.
Ingredients
1/2 red cabbage (about 800g)
300g smoked chicken breast
2 tomatoes
7 tablespoons canned corn
4-5 green onion stalks (or 1/2 dried onion)
4-5 parsley stems
8 radishes
olives and bell peppers (optional, I didn't add them this time)
4 tablespoons oil (preferably olive oil)
salt, pepper
How to prepare red cabbage salad with smoked chicken breast
- Cut the cabbage into thin noodle-like strips and knead it with 1 teaspoon of salt until it softens (if you have help like I did, even better 😉 ).
- Add the rest of the vegetables: tomatoes cut into cubes, finely chopped parsley and onions, sliced radishes, and corn.
- Season with pepper and mix gently. Taste for salt and pepper and add more if needed.
- Add the oil and mix again.
- If serving as a family meal, cut the chicken breast into cubes and add to the salad.
If serving at a fancier dinner, arrange the salad on plates, then slice the chicken breast and place the slices around the edge.
