Shrimp in Tomato and Feta Sauce

Since returning from vacation, I've been looking to prepare interesting dishes with tomatoes. Because I know that once their season passes, I miss them terribly. Nothing do I long for more in the cold season than a ripe tomato. This shrimp in tomato and feta sauce recipe is exactly how I ate it in Crete, known there as "garides saganaki".
Ingredients
15 shrimp
500 g tomatoes (very ripe)
1 very small onion
3 garlic cloves
1 bay leaf
70 g feta cheese
1 tablespoon oil
1 tablespoon extra virgin olive oil
salt, black pepper

How to prepare shrimp in tomato and feta sauce
- Clean the shrimp (you can leave the tails on if you wish). Rinse quickly under running water and dry with paper towels.
- In a tablespoon of hot oil, quickly sauté the finely chopped onion until soft. Add the crushed garlic and sauté for another minute.
- Add the peeled tomatoes pureed in a food processor (or grated). Season with ground black pepper, a little salt, and the bay leaf.
- Simmer the sauce for 10 minutes over medium heat until reduced.
- Remove the sauce from heat and blend briefly with an immersion blender (or in a blender/food processor). Crumble about 50 g of feta into the sauce, add the olive oil and stir. Adjust the sauce with salt and pepper.
- In an oven-safe dish, place half of the tomato sauce, arrange the shrimp on top, and cover with tomato sauce. Sprinkle the remaining cheese on top.
- Bake in the oven under the grill set to maximum for 10 minutes, until the cheese on top is lightly browned.
- Serve immediately with fresh bread.
