Shrimp with Vegetables and Cheese

Sweet and spicy summer skillet dish, inspired by the Turkish recipe, Karides Güveç.
On Friday I found some extremely sweet and fresh shrimp. Saturday morning I went to the farmers' market at the Sports Hall (note for Cluj residents, the market is great! besides Romanian vegetables you'll find more interesting products: kale, Brussels sprouts, arugula, fresh lavender, different varieties of hot peppers, all produced around our city). So it happened that on Saturday at lunch I prepared this dish that combines the goodies from the market and the shrimp.
Ingredients
15 shrimp
1 small onion (about 50 g)
2 semi-hot Bulgarian peppers
1 small tomato (about 150 g)
12 small cherry tomatoes (colorful if possible)
35 g cow's milk cheese (or mozzarella)
2-3 parsley sprigs
2 tablespoons olive oil
1/4 teaspoon sweet paprika
salt, black pepper
Servings: 1 (main course); 2 (warm appetizer)
How to prepare shrimp with vegetables and cheese
- Completely clean the shrimp. Rinse in cold water and then dry well on paper towels.
- In a not-too-wide skillet (about 16-18 cm), heat the oil and add the finely chopped onion and the peppers, cleaned and cut into squares. Sauté until they soften a bit (about 5 minutes). Season with salt and black pepper.
- Add the shrimp and stir a few times, just until they turn pink all over. Remove immediately from the pan.
- To the remaining vegetables, add the tomato grated on a box grater, the whole cherry tomatoes and the paprika. Sauté briefly, just until the cherry tomatoes crack slightly (about 3 minutes).
* if the skillet is not oven-safe, for the next steps you can transfer the contents to a ceramic oven-safe dish with low sides - Remove the pan from heat. Put the shrimp back in the pan. Sprinkle half of the chopped parsley. Grate the cheese on top (more toward the center, leave the edges visible). Sprinkle the rest of the parsley.
- Put the pan in the oven at 200°C just until the cheese is melted (it shouldn't brown) and you can see the sauce bubbling on the edges (about 5-7 minutes).
- Serve warm with fresh bread.
