Rice and Beans
Simple Recipes Budget Recipes Side Dishes South American Rice
I got inspiration from Puerto Rico for this side dish served alongside some sausages that I grilled on a steam grill pan.
Ingredients
1 can red kidney beans (400g)
50g smoked bacon (or other smoked meat)
1 onion
1 red bell pepper
1 green bell pepper
1/2 bunch parsley
2 garlic cloves
1 potato
1/2 cup tomato passata
1 bay leaf
1 teaspoon oregano
1 teaspoon adobo seasoning (optional)
1/2 cup rice
salt
How to prepare rice and beans
- Cut the bacon into small cubes and fry (without oil) over low heat until golden and crispy.
- Add the very finely chopped onion, peppers, and parsley, and sauté until the vegetables soften. Add a little oil if needed, if the bacon didn't release enough fat.
- Add the crushed garlic and diced potato, and sauté for 1 more minute.
- Deglaze with the passata and 1 cup of water. Add the drained beans, bay leaf, oregano, adobo (or use pepper if unavailable), and salt to taste. Bring to a boil, reduce heat to low, and simmer until the potato is cooked (about 25 minutes).
- Meanwhile, cook the rice in salted water. Drain well.
- Pour the rice over the beans with sauce and stir. Adjust salt to taste.
- Serve with bacon or grilled sausages.
