Recipe: Rice and Beans

I got inspiration from Puerto Rico for this side dish served alongside some sausages that I grilled on a steam grill pan.

Ingredients

1 can red kidney beans (400g)
50g smoked bacon (or other smoked meat)
1 onion
1 red bell pepper
1 green bell pepper
1/2 bunch parsley
2 garlic cloves
1 potato
1/2 cup tomato passata
1 bay leaf
1 teaspoon oregano
1 teaspoon adobo seasoning (optional)
1/2 cup rice
salt

How to prepare rice and beans

  1. Cut the bacon into small cubes and fry (without oil) over low heat until golden and crispy.
  2. Add the very finely chopped onion, peppers, and parsley, and sauté until the vegetables soften. Add a little oil if needed, if the bacon didn't release enough fat.
  3. Add the crushed garlic and diced potato, and sauté for 1 more minute.
  4. Deglaze with the passata and 1 cup of water. Add the drained beans, bay leaf, oregano, adobo (or use pepper if unavailable), and salt to taste. Bring to a boil, reduce heat to low, and simmer until the potato is cooked (about 25 minutes).
  5. Meanwhile, cook the rice in salted water. Drain well.
  6. Pour the rice over the beans with sauce and stir. Adjust salt to taste.
  7. Serve with bacon or grilled sausages.
