Rice with Roasted Peppers

I liked the roasted pepper dressing from the pasta salad with tuna so much that on Sunday night I prepared a quick "risotto" based on the same idea.
Ingredients
1/2 cup rice
1 medium onion
50g spicy sausage
2 roasted red peppers
1 teaspoon lemon juice
1 clove garlic
salt, pepper
1 teaspoon oil

How to prepare rice with roasted peppers
- Boil the rice in plenty of salted water according to the package instructions.
- Cut the sausage into small cubes and fry in very little oil - they will release fat to brown in. When the cubes are crispy, remove them to a paper towel to absorb the fat.
- Make a sauce from 1 roasted pepper, the lemon juice, garlic, 30ml of rice cooking water, and a pinch each of salt and pepper, blending in a blender until it becomes a smooth paste.
- In the oil remaining in the pan, saute the very finely chopped onion until well softened. Turn the heat to low. Add the drained rice and the pepper sauce. Check the rice for salt and add if necessary. Add the other roasted pepper cut into cubes and the sausage cubes and mix gently.
