Romanian Potato Soup with Smoked Sausage

Obviously I couldn't help myself and had to add smoked meat 😋 . I made this potato soup a few days ago in a lacto-vegetarian version. After we complained a bit about it, that the potatoes weren't good, that there wasn't enough lovage, we decided that the big problem was the lack of smoked meat. So yesterday I remade the soup in the "Transylvanian" version 😉
Ingredients
1 kg potatoes
100 g smoked sausage (or bacon or other smoked meat)
1 teaspoon sweet paprika
1 teaspoon pepper
2 teaspoons salt
2 sprigs lovage
1 large onion
1 level tablespoon flour
100 ml tomato juice
300 g sour cream
3 tablespoons oil

How to prepare romanian potato soup with smoked sausage
- Peel the potatoes and cut them into cubes. Slice the sausage.
- In a pot, heat 2 tablespoons of oil and lightly fry the sausage for about 2 minutes. Add the potatoes, paprika, salt, and pepper and cover everything with 2 liters of water. Add the whole lovage leaves to the soup. Simmer over medium heat until the potatoes are 90% done.
- For the roux: in a small pan, heat the oil and sauté the finely chopped onion. When softened, add the flour, mix well and deglaze with the tomato juice, then with 1 ladle of hot soup.
- Place a strainer over the soup pot and pour the roux through it. Dip the strainer in the soup and stir with a wooden spoon until the roux dissolves into the soup. Discard the onion remaining in the strainer.
- Let it simmer for a few more minutes until the potatoes are done.
- In a bowl, put the sour cream and add about 3 ladles of hot soup one by one, mixing well to temper it.
- Turn the heat to minimum under the potatoes so the soup doesn't boil. Slowly pour the sour cream into it, stirring constantly. Leave for a few more minutes on low heat. Adjust salt to taste. Turn off the heat, cover with a lid and let it cool. When cold, remove the lovage. Store the potato soup in the refrigerator.
