Sesame Spinach Stir-Fry

Japanese-style sauteed spinach.
Ingredients
400 g baby spinach
1 teaspoon grated ginger (on a fine grater)
1 garlic clove
1/4 teaspoon chili flakes
1/4 teaspoon sesame oil
1 tablespoon soy sauce (Japanese)
1 tablespoon sesame seeds
3 green onion stalks

How to prepare sesame spinach stir-fry
- Toast the sesame seeds in a dry pan until lightly golden. Remove immediately to a bowl, as they burn easily.
- In a wide pan, add the spinach (in 3-4 batches) and saute just until it wilts. If you find it more convenient, you can briefly blanch it in salted water instead. Transfer the spinach to a bowl and once it cools a bit, squeeze out the excess liquid well.
- In a wide pan, heat the oil and add the ginger paste, chili, and crushed garlic. Saute briefly, about 15 seconds.
- Add the spinach and saute for another minute to blend the flavors.
- Transfer the spinach to a bowl, immediately add the soy sauce, sesame oil, sesame seeds, and sliced green onion. Toss gently. Adjust salt to taste.
- Serve immediately with steamed rice and tofu (during fasting periods) or with fish.
