Recipe: Spinach with Ground Meat and Rice

I really love cooking these kinds of recipes during the week. For me this is comfort food: quick, tasty, healthy.

Ingredients

400g spinach
250g ground meat (I used beef)
50g short-grain rice
1 medium onion
2 large garlic cloves
1 tablespoon pepper paste
1/2 tablespoon tomato paste
1 teaspoon Turkish spice blend
2 tablespoons oil
salt

How to prepare spinach with ground meat and rice

  1. Sort and trim the stems from the spinach. Then wash in several changes of water and drain. If it's very tender/young, leave it as is; if the leaves are tougher and larger, place on a cutting board and roughly chop with a knife.
  2. In hot oil, sauté the finely chopped onion just until it softens a bit (about 5 minutes). Add the crushed garlic and sauté for 1 more minute. Add the tomato and pepper pastes and Turkish spice and sauté for another 2 minutes.
  3. Add the meat and sauté, stirring frequently, just until it changes color throughout.
  4. Add the rice and 1.5 cups of water (375ml). Add salt.
  5. Bring to a boil, turn the heat to low and simmer covered for 10 minutes, until the rice swells a bit.
  6. Add the spinach in batches, stirring after each addition to let it wilt. When it's all settled in the pot, put the lid back on and simmer for another 10-15 minutes (taste to make sure the rice and spinach are cooked after this time). Adjust the salt.
  7. Serve warm with plain yogurt.
