Spinach with Ground Meat and Rice

I really love cooking these kinds of recipes during the week. For me this is comfort food: quick, tasty, healthy.
Ingredients
400g spinach
250g ground meat (I used beef)
50g short-grain rice
1 medium onion
2 large garlic cloves
1 tablespoon pepper paste
1/2 tablespoon tomato paste
1 teaspoon Turkish spice blend
2 tablespoons oil
salt

How to prepare spinach with ground meat and rice
- Sort and trim the stems from the spinach. Then wash in several changes of water and drain. If it's very tender/young, leave it as is; if the leaves are tougher and larger, place on a cutting board and roughly chop with a knife.
- In hot oil, sauté the finely chopped onion just until it softens a bit (about 5 minutes). Add the crushed garlic and sauté for 1 more minute. Add the tomato and pepper pastes and Turkish spice and sauté for another 2 minutes.
- Add the meat and sauté, stirring frequently, just until it changes color throughout.
- Add the rice and 1.5 cups of water (375ml). Add salt.
- Bring to a boil, turn the heat to low and simmer covered for 10 minutes, until the rice swells a bit.
- Add the spinach in batches, stirring after each addition to let it wilt. When it's all settled in the pot, put the lid back on and simmer for another 10-15 minutes (taste to make sure the rice and spinach are cooked after this time). Adjust the salt.
- Serve warm with plain yogurt.
