Recipe: Spinach with Yogurt

A lighter version of Transylvanian spinach: sautéed spinach with yogurt. Ready in minutes.

It's delicious on its own or as a side dish (next to grilled chicken breast or trout fillet, for example).

Ingredients

300g spinach (young or baby)
200g Greek yogurt (10% fat)
1 large garlic clove
1/4 teaspoon chili flakes
1/2 tablespoon tomato paste
2 tablespoons olive oil
salt, black pepper, ground nutmeg

How to prepare spinach with yogurt

  1. Clean the spinach, remove the stems if needed. If using baby spinach, leave it as is. Wash and drain well. After cleaning, you should have 300g of spinach.
  2. In a wide pan, gently heat the oil over low heat and add the sliced garlic and chili flakes. Let it infuse over low heat for 2-3 minutes to flavor the oil.
  3. Add the tomato paste, turn the heat to medium and fry the paste for 1 minute, stirring frequently.
  4. Turn up the heat and add the spinach (in 3-4 batches), stirring constantly until it wilts.
  5. As soon as the spinach has lost its volume, remove the pan from heat. Stir the yogurt well and pour it over the spinach. Mix until it combines well with the spinach juices and becomes sauce-like.
  6. Season with salt and pepper to taste. Be sure to add a pinch of ground nutmeg. Serve immediately.
