Toast with Butter and Red Radishes

Tartines much loved last week. And this week and next week... as long as red radish season lasts.
Ingredients
slices of toasted bread (you can use rye bread or rustic bread)
red radishes
coarse sea salt
Butter Cream
100 g butter (at room temperature)
30 g sour cream (fermented)
1 heaping teaspoon chopped herbs (parsley and dill)
1/2 teaspoon coarse sea salt (or fleur de sel; use less if using regular salt)
Pieces: 8 tartines
How to prepare toast with butter and red radishes
- Rub the butter well until creamy. Gradually incorporate the sour cream. Add the herbs and salt and mix until smooth. If the butter releases whey, drain it.
* the cream can also be mixed in a food processor or with a hand mixer - Toast the bread as crispy as you like, but let it cool completely. Grate the radishes on the large holes of a grater or slice them into thin rounds.
- Spread the butter on the bread slices, sprinkle the radishes on top and a bit more salt. Serve immediately.
