Tomato Powder
Powder is an excellent way to preserve the flavor of summer tomatoes. This way it will be with us throughout the entire cold season. It can be added to stews, soups and broths, bread or focaccia dough, salad dressings, spice mixes, anywhere you use tomatoes but their flavor isn't satisfying. A little powder and you'll bring the sweetness of summer tomatoes to your dishes.
If you mix 1 part powder with 2 parts water, you'll get instant tomato paste. And if you mix 1 part powder with 4 parts water and some seasonings (garlic, oregano, basil), you'll get instant tomato sauce.

How to prepare tomato powder
- Tomatoes can be dried in the oven following this method (steps 1, 2, 3 from the recipe), except this time they need to be left to dehydrate completely, until well dried and brittle. Or they can be dried in a fruit and vegetable dehydrator.
- Grind the tomatoes in a spice grinder until they become a fine powder.
- Store in a sealed jar, refrigerated - otherwise the powder absorbs moisture.
