Garam Masala
Garam Masala, one of the most used and well-known Indian spice blends. Masala means "spice blend", and garam means "hot", referring to the strong aroma with a warming effect on the body that this spice has. On this site, I've posted two recipes so far where you can try this spice blend: fish curry and lentil stew.
Ingredients
2 tablespoons coriander seeds (or 2 teaspoons ground coriander)
2 tablespoons cumin seeds (or 2 teaspoons ground cumin)
2 teaspoons black peppercorns (or 1 level teaspoon ground black pepper)
2 teaspoons mustard seeds (1 level teaspoon ground mustard or you can use 1 teaspoon fennel seeds)
1/2 teaspoon cloves
1/4 teaspoon ground nutmeg
1 cinnamon stick, 5 cm
seeds from 5 cardamom pods
2 bay leaves
How to prepare garam masala
- Put all the whole (unground) ingredients in a pan and toast for about 2 minutes until they start to smell strongly.
- Put in a spice grinder together with the pre-ground ingredients and blend well until you get a powder. Let it cool.
- Store in an airtight jar.
