Recipe: Homemade Vegetable Seasoning Mix

I stopped using store-bought vegeta a long time ago because it has a very high salt content, contains MSG (which is suspected to cause headaches), and other colorants and preservatives. Eventually, I also gave up on concentrated cubes like Knorr due to an unpleasant experience that I won't share because it's too disgusting.

Luckily, I discovered a food dehydrator and what excited me most was that I can prepare vegetable seasoning very quickly and easily, and at the same time it's completely natural, without preservatives and colorants. You can dry any vegetables and herbs when they're in season and store them in airtight jars. It's much cheaper and healthier, and you know exactly what goes into your food. Do not store dried vegetables in metal containers!

celery root
parsley root
kohlrabi
onion
celery leaves
parsley leaves
lovage leaves

How to prepare homemade vegetable seasoning mix

  1. Peel the carrots, celery, parsley root, kohlrabi, and onion and grate them on the small holes of the grater.
  2. Place each vegetable separately on a flat tray of the dehydrator.
    * carrots will color the other vegetables, but when dried separately each one retains its color.
  3. Then dry the leaves.
    * the dehydrator has a manual with drying times for all vegetables and herbs
  4. Mix all the dried vegetables together, homogenizing the contents. And the homemade vegetable seasoning is ready. You can grind the resulting mix in a coffee grinder to get a powder similar to the store-bought version.
