Recipe: Uramaki Sushi (Inside-Out Rolls)

I saved the best for last, my favorite version of sushi: with spicy salmon and cucumber filling.

Uramaki is a roll-type sushi, similar to maki, except the layers are reversed: the rice is on the outside and the nori sheet inside. They're a bit more difficult to shape than maki. You really need a super sharp knife to cut them. I thought I had good knives, but they didn't pass the uramaki test - I struggled a bit with them.

If you use cucumber, avocado, and crab meat (or surimi) for the filling, you'll get a California roll. California rolls are topped with sesame seeds or fish roe.

Ingredients

1 portion sushi rice (prepared according to instructions here)
300 g salmon fillet (or other fish; or surimi)
1/2 teaspoon hot chili paste (or to taste; I used Hungarian paste)
1 cucumber
some dried green onion for garnish
nori sheets
wasabi
pickled ginger
soy sauce

Pieces: approx. 24 (6 small servings)

How to prepare uramaki sushi (inside-out rolls)

  1. To form these rolls, you need a bamboo mat wrapped in plastic wrap to keep it clean.
  2. Cut the salmon into small strips, and cut the cucumber into slices, then cut the slices into matchsticks (julienne). Mix the salmon with the chili paste.
  3. Place a nori sheet on the bamboo mat with the rough side facing up.
  4. Spread a thin layer of rice on the sheet (spread it with wet hands). Try to make the layer as even as possible in thickness. Flip the nori sheet so the rice is facing down.
  5. Place strips of salmon and then cucumber matchsticks along one edge of the nori sheet.
  6. Roll using the bamboo mat: first roll enough to cover the filling, press the roll firmly to seal, then continue rolling to the end.
  7. Optionally, sprinkle dried green onion crumbled between your fingers over the roll (or dried parsley; or sesame seeds).
  8. Cut the roll in half, then each half into three pieces. You'll get 6 uramaki pieces.

  9. Repeat until you finish the rice or salmon.
  10. Sushi is served with wasabi, pickled ginger, and soy sauce.
