This weekend I made just this simple little cake to boost our blood sugar a bit. As for eating... during course breaks, just walking through the mall and downtown Cluj, which I admit I hadn't walked through in a while, but the beautiful sunny weather made the "reunion" pleasant. I still have a little bit of cake left for today, so help yourself to a piece - it's made with homemade plum jam cooked in a cauldron.
Before I forget, Radu had a small comment about this cake - he thought the bottom layer was a bit too thick compared to the filling. If you're also not fans of this type of cake, spread just a little more than 1/3 of the dough at the base.
Ingredients
300g butter
160g powdered sugar
450g flour
2 packets vanilla extract
200g ground walnuts
1 jar (400g) plum jam (silvoita)
2 tablespoons rum (or 1 packet rum extract)
How to prepare walnut and plum jam cake
- Beat the butter with the extract and sugar using a mixer until fluffy. Add the flour and mix until the dough comes together.
- Mix the jam with the ground walnuts and rum.
- Prepare a round springform pan (26cm diameter) with parchment paper on the bottom. Put 2/3 of the dough in the pan and spread it with your hand, then level it with the bottom of a glass.
- Spread the walnut jam mixture over the dough layer.
- Grate the remaining dough on a coarse grater over the jam layer. Press lightly with your hand so it adheres to the jam layer underneath.
- Bake at 180C (350F) for 40 minutes.
