In the morning, I excitedly pulled out a beautiful, fresh broccoli from my "hat". I immediately saw my husband's face scrunch up, and then he said with exaggerated honesty (he's always like that!): yes, I really missed this during quarantine.
So by lunch, I came up with the idea to transform it into something he couldn't resist. A good pate to spread on bread with his favorite sheep cheese on top.
I didn't go into quarantine until I had this cheese in my fridge. What else did I compulsively buy before the big isolation? Definitely not toilet paper or flour. Nope... there was no fighting at the shelves where I filled my cart. I got black peppercorns for a lifetime, 2 jars of chili flakes, about half a kilo of ginger and garlic, capers, anchovies and sardines. Ohhh, and lots of lemons.
If your crisis shopping cart says something about you, what does mine say? But I don't think that's important right now, what's more important is whether he ate the broccoli.
Ingredients
Baked Broccoli
1 head of broccoli
1 tablespoon mustard
2 tablespoons oil
1/4 teaspoon dried thyme, crumbled
salt, black pepper
For the pate
1/2 organic lemon
1 heaping tablespoon grated hard sheep cheese (or any other hard cheese like pecorino or parmesan)
extra virgin olive oil
freshly ground black pepper
How to prepare baked broccoli pate
- Break the broccoli into florets. Sprinkle with salt. In a small cup, mix the rest of the ingredients for the baked broccoli (grind black pepper generously) and pour over the florets. Mix well.
- Place the broccoli on a baking tray lined with parchment paper and bake at 200°C (400°F) for 15 minutes.
- Put the broccoli in a food processor and grate the zest of 1/2 lemon over it, add 1 tablespoon of lemon juice and the grated cheese. Grind black pepper generously again. Blend until finely minced. Then gradually add quality olive oil while the processor is running, just until the pate comes together. Taste for salt.
- It's delicious spread on bread with thin strips of sheep cheese (the same one you used for the pate).
