Recipe: Pasta Salad with Tuna, Sun-dried Tomatoes and Broccoli

Broccoli in olive oil in double action: it's used both in the dressing and in the salad.

Ingredients

150 g pasta
3 tablespoons broccoli in olive oil
50 g semi-dried tomatoes (in oil)
100 g natural tuna (canned)
1 tablespoon lemon juice
salt, black pepper

Broccoli dressing

2 tablespoons broccoli in olive oil + 3 tablespoons oil from the jar
2 tablespoons lemon juice
4-5 basil leaves
30 g grated parmesan

How to prepare pasta salad with tuna, sun-dried tomatoes and broccoli

  1. Cook the pasta in plenty of salted water according to package instructions. Drain and let cool a bit.
  2. Put all the dressing ingredients in a food processor and blend until it becomes a paste.
  3. Pour the dressing over the pasta and mix. Let cool completely.
  4. Add the dried tomatoes, slices of broccoli in oil (well drained) and the tuna sprinkled with a tablespoon of lemon juice and flaked with a fork. Mix and adjust the salad for salt and lemon juice. Season with black pepper.
