Pasta with Broccoli

This Sicilian recipe is my favorite when it comes to cooking something with broccoli.
Sometimes I make a simpler version: instead of onion, I sauté a few garlic cloves, and instead of passata, I add a little saffron for color.
Ingredients
1 head of broccoli (about 500g)
250g short pasta
1 onion
3 anchovy fillets in oil
6 tablespoons passata
3 tablespoons pine nuts
3 tablespoons olive oil
salt, pepper
Servings: 3-4
How to prepare pasta with broccoli
- Bring plenty of salted water to a boil in a pot.
- Break the broccoli into small florets. Put them in the boiling water and cook for 5 to 8 minutes, until cooked but not soft. Remove from water, place in a colander, and quickly run under cold water to stop the cooking and preserve the green color.
- In the same water where the broccoli was cooked, cook the pasta according to the package instructions.
- Heat the oil in a pan and sauté the finely chopped onion.
- When softened, add the chopped anchovy fillets and cook for 1 more minute.
- Add the passata, a little pepper, and 100ml of pasta water, and simmer over low heat for about 10 minutes. If the sauce seems too dry during this time, add more pasta water.
- Add the pine nuts and bring to a boil a few times.
- Add the drained pasta to the sauce and toss until coated.
- Add the broccoli and salt to taste, and gently mix.
- Serve sprinkled with parmesan.
