Noodles with Beef and Broccoli

I dreamed about broccoli all week. I prepared beef with broccoli twice. The first time without noodles, just with boiled rice. And the second time like this, with egg noodles. It's the kind of comfort food I like to prepare on the day I go running.

Ingredients
1 bavette steak (about 200 g)
200 g broccoli florets
150 g Chinese egg noodles
1 level teaspoon starch
1 level teaspoon baking soda
3 tablespoons oil
Sauce
8 tablespoons low-sodium soy sauce (Kikkoman)
8 tablespoons mirin
2 level tablespoons sugar
2 crushed garlic cloves
1 tablespoon grated ginger
2 tablespoons lime juice (or lemon)

How to prepare noodles with beef and broccoli
- Put the sauce ingredients in a saucepan and boil until reduced by half (about 10 minutes). Strain the sauce, pressing well the remains in the strainer to extract all the juice. After cooling, the sauce should have the consistency of a syrup.
- Cut the meat into strips perpendicular to the grain, about 1/2 cm thick.
- Sprinkle the meat with baking soda, mix well and let it sit for 15 minutes. Wash well under running water, drain and then absorb the meat pieces with kitchen towels.
Massage with 1 teaspoon soy sauce and 1 teaspoon starch and let it sit for another 15 minutes. - Break the broccoli into large florets which are then cut into slices. The slices will fit better in the pan and will sauté more easily.
- Prepare the noodles according to package instructions. Drain.
- Heat a wok or a large cast iron pan over high heat. When hot, add 2 tablespoons of oil. Sauté the meat briefly, stirring a few times, just until it changes color. Remove immediately from the pan.
- Add another 1 tablespoon of oil and sauté the broccoli, stirring occasionally (about 5 minutes; check it and if you want it more cooked, continue sautéing). Remove the broccoli to a plate and sprinkle with a little salt.
- Add the meat back to the pan along with half of the reduced sauce. Cook together for about 1 minute, until the meat is coated with sauce and looks caramelized (dark in color and shiny).
- Remove the pan from heat, add the remaining sauce and noodles. Mix well, until the noodles absorb the sauce. Add the broccoli. Adjust for salt.
