Baked Pasta with Vegetables

Ingredients
250g short pasta
125g mozzarella
125g smoked cheese
1 small onion
1 small bell pepper
1 small zucchini
1/2 small eggplant
5 champignon mushrooms
5 basil leaves
2 tablespoons oil
salt, pepper
Parmesan sauce
50g butter
1 tablespoon white flour
250ml hot milk
50g parmesan
salt

How to prepare baked pasta with vegetables
- Heat the oil well and sauté the onion, chopped peppers (but not too finely), and cubed eggplant until slightly softened.
- Add the remaining vegetables cut into cubes. Sauté over high heat until cooked, but not too soft.
- Remove the vegetables from heat and season with salt and pepper to taste. Add the chopped basil.
- Bring plenty of salted water to boil. Cook the pasta according to package instructions.
- While the pasta is cooking, prepare the white sauce using the instructions here. Remove the sauce from heat and add the grated parmesan in batches, stirring after each addition until melted.
- Mix the cooked and drained pasta with the sautéed vegetables. Pour the parmesan sauce over them and adjust salt.
- Put the entire mixture in an oven-safe dish. Tear the mozzarella on top. Sprinkle with grated smoked cheese.
- Bake at 200°C until the cheeses are melted (about 20 minutes).
- Serve warm.
