Recipe: Pasta with Tomato Sauce

Ingredients

200g short pasta
grated cheese (parmesan-type or yellow cheese)

Tomato sauce

1 can of tomatoes (400g)
3 cloves of garlic
50ml dry red wine
1 heaping teaspoon balsamic vinegar glaze
1 teaspoon sugar
1 tablespoon butter
5 large basil leaves
2 tablespoons oil
salt, pepper, chili flakes

How to prepare pasta with tomato sauce

  1. Add the crushed garlic and chili flakes to taste (I used 1/4 teaspoon) to the hot oil. Sauté for 30 seconds, then add the tomatoes (blended with just 3 pulses in a food processor or mashed with a fork). Immediately add the wine, vinegar, sugar, a little salt, and black pepper.
  2. Bring everything to a boil, lower the heat and simmer covered for 30 minutes.
  3. Remove the lid, cook for another 2-3 minutes uncovered to reduce slightly, then add the butter. Cook for 2 more minutes. Add the chopped basil. Adjust salt to taste.
  4. Meanwhile, cook the pasta in salted water according to package instructions. Drain and add to the hot sauce. Mix well so the pasta is coated with sauce.
  5. Serve the warm pasta with grated cheese.
