Pasta with Tomato Sauce

Ingredients
200g short pasta
grated cheese (parmesan-type or yellow cheese)
Tomato sauce
1 can of tomatoes (400g)
3 cloves of garlic
50ml dry red wine
1 heaping teaspoon balsamic vinegar glaze
1 teaspoon sugar
1 tablespoon butter
5 large basil leaves
2 tablespoons oil
salt, pepper, chili flakes
How to prepare pasta with tomato sauce
- Add the crushed garlic and chili flakes to taste (I used 1/4 teaspoon) to the hot oil. Sauté for 30 seconds, then add the tomatoes (blended with just 3 pulses in a food processor or mashed with a fork). Immediately add the wine, vinegar, sugar, a little salt, and black pepper.
- Bring everything to a boil, lower the heat and simmer covered for 30 minutes.
- Remove the lid, cook for another 2-3 minutes uncovered to reduce slightly, then add the butter. Cook for 2 more minutes. Add the chopped basil. Adjust salt to taste.
- Meanwhile, cook the pasta in salted water according to package instructions. Drain and add to the hot sauce. Mix well so the pasta is coated with sauce.
- Serve the warm pasta with grated cheese.
