Recipe: Niçoise Salad with Pasta

In this version, Niçoise salad becomes a hearty and quick-to-prepare lunch. For a low-calorie version, you can replace the pasta with lettuce cut into strips.

Ingredients

200 g short pasta
150 g green beans (fresh or frozen)
1 can tuna in oil (170 g; good quality)
10 cherry tomatoes
15 black olives (or green)
1 small bunch parsley
5 basil leaves
1 tablespoon capers
3 boiled eggs
2 tablespoons oil
1 tablespoon lemon juice
1/4 teaspoon dried oregano
salt, pepper

How to prepare niçoise salad with pasta

  1. Put the pasta and green beans to boil in the same pot with hot salted water. Boil according to the instructions on the pasta package, about 10 minutes for short pasta.
  2. Boil the eggs.
  3. Meanwhile, drain the oil from the tuna (save the oil) and flake with a fork. Add the capers, olives, finely chopped parsley and basil, cherry tomatoes cut in half (or quarters, depending on size). Mix everything gently.
  4. Drain the pasta and green beans and pour over the tuna. Sprinkle with salt and pepper to taste and mix gently.
  5. Beat together 2 tablespoons olive oil with 1 tablespoon oil from the tuna and lemon juice. When it becomes like an emulsion, add the oregano and pour over the salad. Mix well.
  6. Serve the salad warm or cold with sliced boiled eggs.
