Tuna Pasta Salad
Simple Recipes Valentine's Day Pasta Fish and Seafood Salads
I don't know how your week was, but I had a bad week when it came to cooking - actually I didn't cook much, not because I lacked inspiration, but because I had no energy when I got home. Could it be because Venus was retrograde? 😋
Ingredients
250g short pasta
1 can tuna chunks in oil (200g)
6 slices/cubes goat cheese (or feta/cow's milk cheese)
5 sprigs parsley
Dressing
1 large roasted red pepper
1 clove garlic
30ml olive oil
1 teaspoon lemon juice
1 pinch salt
1 pinch pepper
How to prepare tuna pasta salad
- Cook the pasta in plenty of salted water according to the package instructions.
- For the dressing: put all the ingredients in a blender, plus 2 tablespoons of the pasta cooking water. Blend well until you get a paste. Taste for salt and lemon juice and add more if necessary.
* my goat cheese already had Provence herbs, that's how I bought it; if you don't have something like this, you can roll the cheese cubes in a little oregano or Provence herbs so they look better; or you can add a pinch of oregano to the dressing - Drain the pasta and pour the dressing and finely chopped parsley over them. Mix well.
* the pasta can also be eaten plain, just with the dressing, they are very tasty. - Divide the pasta into 2 salad bowls, sprinkle half of the tuna can (drained of oil) on each. Place the cheese slices on top. Serve immediately.
