Recipe: BLT Salad

A classic combination that never goes out of style: B(acon)+L(ettuce)+T(omato).

I used Boston lettuce, taking the outer leaves for other salads and keeping the "heart" (the compact center with tender leaves) for this salad. When you want to make more servings and don't want to bother with "hearts", you can use crispy romaine lettuce leaves.

Ingredients

1 lettuce "heart"
10-15 cherry tomatoes

Bacon Dressing

1 small red onion (about 20g)
3 tablespoons lemon juice
50g bacon (speck, smoked pancetta)
1 teaspoon balsamic vinegar glaze

Gorgonzola Sauce

100ml cooking cream (15% fat)
30g gorgonzola
chives

How to prepare blt salad

  1. Sauce: put the cream in a small saucepan and heat well. Add the cheese and stir until completely melted. Cook the sauce for 1 minute and remove from heat. Adjust salt if needed. Let it cool completely. Can be stored in the refrigerator until needed.
  2. Dressing: slice the onion into rounds, sprinkle with a little salt and lemon juice. Let it sit until the bacon is ready.
  3. Dice the bacon and put it in a pan without any fat. Fry (over low heat at first, until it starts to release its fat) until browned and crispy. Remove from heat and add the balsamic vinegar glaze. Mix well. The bacon will take on a beautiful color.
  4. Pour the bacon (entire contents of the pan) over the macerated onion. Mix well. Let it sit for 5 minutes while you prepare the vegetables. Then taste for salt and acidity (add more lemon juice or balsamic vinegar if you want it more acidic).
  5. Cut the lettuce "heart" in half or quarters lengthwise. Place on each plate. Add halved or quartered tomatoes (depending on size) alongside. Drizzle each salad with the dressing. Pour gorgonzola sauce over the tomatoes.
