Bulgur with Herbs

Invigorating bulgur with a fresh, tangy and aromatic taste. I prepared the herbs tabbouleh-style and after they macerated for a while, I added a larger amount of coarse bulgur. Good to have on hand in the refrigerator as it can be added to soups, salads or used as a side dish.
Ingredients
100g coarse bulgur
1/2 bunch parsley
2 small/young green onion stalks
10 mint leaves
2 tablespoons lemon juice
zest of 1/4 lemon
2-3 tablespoons oil
salt, pepper

How to prepare bulgur with herbs
- Bring salted water to a boil and add the bulgur. Cook over low heat until done, about 10 minutes.
- Meanwhile, finely chop the parsley and mint. Add the green onion cut into thin rounds, lemon zest, sprinkle a little salt and grind black pepper. Add the lemon juice and mix. Let the herbs macerate in the lemon while the bulgur cooks.
- When the bulgur is cooked, drain well and add salt to taste. Let it cool down, so the bulgur is just warm.
- Add the oil to the herbs and mix. Then add the bulgur and mix again.
- It's good immediately while still warm, but also good at room temperature. Can be added to soups, salads or served as a side dish.
