These light patties, full of herbs and rolled in lettuce leaves, are more than just a vegan dish. I know you will love them from the first bite. Those of you who have been to Turkey have surely tried them. You could not have missed them, tourists were queuing for them while the cooks shaped them on the spot from a mountain of orange paste.
Ingredients
400 g starchy potatoes
100 g fine bulgur
1/2 onion
1 tablespoon pepper paste
1/2 teaspoon Turkish spice mix
1 small bunch chives (about 10 g)
1/4 bunch parsley
10 mint leaves
2 tablespoons oil
salt
lettuce leaves for serving

How to prepare potato and bulgur patties (turkish kofte)
- Peel the potatoes, cut them into cubes and boil them in salted water, just as you would for mashed potatoes.
- While the potatoes are boiling, pour 125 ml boiling water over the bulgur sprinkled with a little salt, cover the bowl and let it sit until the onion is ready.
- Finely chop the onion. Saute it in hot oil over low heat until very soft. Add the pepper paste and spice mix and cook together for 1 more minute.
- Pour the onion over the bulgur and mix.
- When the potatoes are done, drain them and mash them to get the finest puree possible.
- Let them cool a bit, then add the bulgur mixture and a little salt over the potatoes. Knead until you get a paste with a uniform orange color. Adjust salt.
- Add the finely chopped herbs and knead for 1 more minute.
- With wet hands or wearing silicone gloves, take walnut-sized portions and shape them by squeezing in your fist. They will take an elongated shape with finger marks, that is ok, do not struggle to shape them too perfectly.
- Place them on a platter lined with lettuce leaves.
- Serve like this: tear pieces from the lettuce leaves and roll the patties in the leaves. They are also good the next day.
