Recipe: Chocolate Walnut Cookies

Chocolate cookies with walnut pieces and dark chocolate chunks throughout. Natural mood boosters 😉

Ingredients

115g dark chocolate (70% cacao)
25g unsalted butter (80% fat)
70g fine sugar
10g vanilla sugar (bourbon)
1 egg
1/2 teaspoon coffee extract
25g all-purpose flour
1 pinch salt
1 pinch baking soda
50g chopped walnuts
50g chocolate chips/flakes (minimum 50% cacao)

How to prepare chocolate walnut cookies

  1. Mix the flour with the salt and baking soda.
  2. Melt the chocolate broken into pieces over a double boiler. Add the butter cut into cubes and stir until melted.
  3. Add the sugar and stir. This will result in a thicker paste-like consistency.
  4. Add the egg and extract and mix well until smooth. The mixture will become softer and glossy.
  5. Add the flour and stir vigorously until the dough feels elastic.
  6. Check that the mixture has cooled and add the knife-chopped walnuts and chocolate chips. Mix.
  7. Place heaping tablespoons of dough on a baking sheet lined with parchment paper. Since the dough is quite elastic, it's easier to use 2 spoons, shape it a bit by passing it from one spoon to another and then let it drop onto the tray. The dough is firm enough that it won't spread on the tray, it will only settle a bit under its own weight (see photo 1). The cookies will fit on a single baking sheet.
  8. Bake the cookies at 175°C for 12 minutes. At the end they will be very soft, but that's okay. Only remove them from the tray after they have cooled for at least 10 minutes, otherwise they will break.
