Recipe: Green Tea Cookies

This is a dessert more for adults than for children. They are perfect to be served in the morning with a cup of tea or milk.

Ingredients

140g flour
70g butter
40g sugar
2 egg yolks
1 tablespoon matcha (green tea powder)
sugar for decorating

How to prepare green tea cookies

  1. In a food processor (or with a hand mixer) mix the sugar with the matcha. Add the butter and when it becomes a paste add the flour. Then add the egg yolks one at a time until homogenized. Shape the dough into a disc, wrap it in plastic wrap and refrigerate for at least 30 minutes.
    * you can use the method from this recipe to roll out the dough, I discovered it only after making these cookies but I think it would work very well because this dough is stickier; the idea is to roll out the prepared dough using a bag and then refrigerate it; when you want to bake the cookies, cut the bag off the dough and quickly cut out the cookies.
  2. Roll out the dough to 1cm thickness and cut out the cookies with your desired shape (mine was a heart 7cm wide). You need to work quickly, otherwise if the dough warms up it can no longer be worked easily! Dip the cookies in sugar (they are a bit sticky but can be handled easily) and place them on a baking sheet lined with parchment paper.
  3. Bake in the oven at 170°C for 15 minutes.
