Green Tea Cookies

This is a dessert more for adults than for children. They are perfect to be served in the morning with a cup of tea or milk.
Ingredients
140g flour
70g butter
40g sugar
2 egg yolks
1 tablespoon matcha (green tea powder)
sugar for decorating

How to prepare green tea cookies
- In a food processor (or with a hand mixer) mix the sugar with the matcha. Add the butter and when it becomes a paste add the flour. Then add the egg yolks one at a time until homogenized. Shape the dough into a disc, wrap it in plastic wrap and refrigerate for at least 30 minutes.
* you can use the method from this recipe to roll out the dough, I discovered it only after making these cookies but I think it would work very well because this dough is stickier; the idea is to roll out the prepared dough using a bag and then refrigerate it; when you want to bake the cookies, cut the bag off the dough and quickly cut out the cookies. - Roll out the dough to 1cm thickness and cut out the cookies with your desired shape (mine was a heart 7cm wide). You need to work quickly, otherwise if the dough warms up it can no longer be worked easily! Dip the cookies in sugar (they are a bit sticky but can be handled easily) and place them on a baking sheet lined with parchment paper.
- Bake in the oven at 170°C for 15 minutes.
