Recipe: Croatian Pepper Cookies (Paprenjak)

The day before yesterday it felt like Christmas in our house. It was cold outside and the heating came on, and the whole house smelled of roasted walnuts and cinnamon. If I had mulled a liter of wine, I could have sat by the window waiting for it to snow.

These cookies are prepared according to a traditional Croatian recipe, they are called paprenjak, meaning pepper cookies, and are made especially during the winter holiday season.

Ingredients

60g butter
1 heaping teaspoon lard
250g flour
110g ground walnuts
60g sugar
60ml honey
1 egg
2 teaspoons cinnamon
1 teaspoon nutmeg
2 cloves
1 generous pinch of pepper

How to prepare croatian pepper cookies (paprenjak)

  1. Cream the butter with the lard until fluffy, then add the rest of the ingredients and knead by hand until the dough no longer sticks to your fingers.
  2. Shape into a log, wrap in plastic wrap, and refrigerate for 1-2 hours.
  3. Cut the log into 0.5 cm thick slices and bake on parchment paper at 200°C (400°F) for 20 minutes (flip them after 10 minutes).
  4. Store in paper bags or sealed containers, they keep for a long time. They are better after 1-2 days, as they soften.
