I got fooled again 😊 These cookies are delicate, perfectly crumbly, with a subtle lemon aroma... and I only made 20 pieces.
The recipe is taken without any changes from here, from Leonor's website, where you can also feast your eyes on other fabulous desserts. I even weighed the 20 grams of egg white to make sure they'd turn out right. However, I added more lemon zest, from half a lemon instead of a quarter as the recipe called for, and even so, I would have liked a bit more.
As for the shape... I couldn't manage to make shapes as beautiful as in the original recipe with the cookie press - I think I lack the necessary physical strength. I barely managed to make the little sticks. I know that back in the day my grandmother had a cookie press attachment for the meat grinder. I would have needed something like that for them to be truly perfect, but oh well, next time I'll either call on Radu's strength or get one of those presses.
Ingredients
125g butter at room temperature
50g powdered sugar
1 pinch of salt
grated zest of 1/2 lemon
1 egg white (from a small egg; more precisely 20g egg white if you have a scale 😉)
150g all-purpose flour
Yield: 20 pieces
How to prepare spritz butter cookies
- Cream the butter well with the powdered sugar. Add the lemon zest and salt and mix some more.
- Add the egg white and mix until incorporated.
- Finally add the flour and knead by hand until the dough is smooth.
- Put the dough in a pastry press (with the thickest tip attached) and form sticks (or other shapes) on a baking sheet lined with parchment paper.
- Refrigerate the tray of cookies for at least 1 hour.
- Bake the cookies at 180C (350F) for 10 minutes. Turn off the oven and leave the cookies inside for another 3 minutes.
* I left them 3 minutes in the turned-off oven because they seemed like they needed a bit more after the 10 minutes of baking, but for safety it's better to check them. - When you take them out of the oven, dust them with a little powdered sugar.
