Classic Caesar Salad

The famous salad invented by Italian chef Caesar Cardini while working at a restaurant in Mexico.
Traditionally, the salad doesn't contain anchovies, with the anchovy flavor coming from Worcestershire sauce. But when I made this salad, I didn't have that sauce on hand, so I substituted with anchovies and lemon juice.

1 head romaine lettuce
4 tablespoons grated Parmesan
Caesar Dressing
1 large garlic clove
2 anchovy fillets (or Worcestershire sauce)
1 pinch salt
1 egg yolk
1 teaspoon mustard
2 tablespoons lemon juice
oil
Croutons
4 slices bread, 1-2 days old
2-3 tablespoons oil
pepper

How to prepare classic caesar salad
- For the dressing: mash the garlic clove thoroughly with salt and finely chopped anchovies until you get a smooth paste.
- Add the egg yolk (raw or boiled, as you normally use for mayonnaise) and mustard. Slowly add oil while stirring continuously until you get a mayonnaise that holds on the spoon.
- Add the lemon juice, mix, then check if more salt or lemon is needed.
- Prepare the croutons: cut the bread into cubes and put them in a pan with 2-3 tablespoons of hot oil. Season with pepper. Stir quickly, the bread will absorb the oil, then leave for 1-2 more minutes on heat until the croutons are crispy.
- Assemble the salad only before eating: wash the lettuce leaves and cut them into strips. Divide them into 4 salad bowls. Add a generous tablespoon of dressing over the salad. Then sprinkle the croutons and finally sprinkle the Parmesan. Serve immediately, otherwise the salad will wilt.
