Fresh and refreshing, this cucumber and feta cheese salad can be your dinner or the perfect side dish for a weekend barbecue.
Ingredients
3 fresh small cucumbers
1 red onion (very small)
100g feta cheese (sheep's milk)
2 tablespoons extra virgin olive oil (high quality)
2 tablespoons lemon juice
3-4 dill stems
salt, pepper

How to prepare cucumber and feta cheese salad
- Cut the onion into very thin rounds. Sprinkle with a little salt and drizzle with lemon juice. Mix well and separate the onion rings. Let sit for 10 minutes.
- Meanwhile, peel the cucumbers and slice them into rounds. Chop the dill and mix with the cucumbers. Sprinkle with salt (keep in mind the cheese is already salty) and pepper to taste.
- Add the olive oil to the marinated onion. Pour the onion over the cucumbers and mix.
- Crumble the feta cheese over the cucumbers and gently toss.
