Recipe: Roasted Potato and Pepper Salad with Marinated Cheese

This is not a new recipe; it is actually a combination of several recipes I already have on the site: roasted potatoes, marinated yogurt cheese, and roasted peppers. From this combination, I created a beautifully colorful and appetizing platter.

Ingredients

6 medium potatoes
1 large red bell pepper
7 balls of marinated yogurt cheese (or marinated feta cheese)
salt, pepper
oregano
thyme
1 tablespoon oil
3 parsley sprigs

Servings: 5

How to prepare roasted potato and pepper salad with marinated cheese

  1. Cut the potatoes into lengthwise slices and season with oil, salt, pepper, oregano, and thyme. Mix well.
    * after many attempts, I always return to the roasted potatoes with mustard recipe, it is the most successful so far, so I recommend that seasoning combination for potatoes instead of the one I used here
  2. Arrange the potatoes in a single layer on a baking tray lined with parchment paper. Place the pepper in the tray as well.
  3. Bake at 250C for 45 minutes.
  4. Peel the roasted pepper and cut into strips. Mix the roasted potatoes with chopped parsley.
  5. Arrange the potatoes on a platter, then the pepper strips, sprinkle a little coarse salt and drizzle with 1 tablespoon of oil from the marinated cheese.
  6. Place the cheese balls on top, and crumble a few balls over the potatoes. Serve immediately.
