Roasted Potato and Pepper Salad with Marinated Cheese

This is not a new recipe; it is actually a combination of several recipes I already have on the site: roasted potatoes, marinated yogurt cheese, and roasted peppers. From this combination, I created a beautifully colorful and appetizing platter.
Ingredients
6 medium potatoes
1 large red bell pepper
7 balls of marinated yogurt cheese (or marinated feta cheese)
salt, pepper
oregano
thyme
1 tablespoon oil
3 parsley sprigs

How to prepare roasted potato and pepper salad with marinated cheese
- Cut the potatoes into lengthwise slices and season with oil, salt, pepper, oregano, and thyme. Mix well.
* after many attempts, I always return to the roasted potatoes with mustard recipe, it is the most successful so far, so I recommend that seasoning combination for potatoes instead of the one I used here - Arrange the potatoes in a single layer on a baking tray lined with parchment paper. Place the pepper in the tray as well.
- Bake at 250C for 45 minutes.
- Peel the roasted pepper and cut into strips. Mix the roasted potatoes with chopped parsley.
- Arrange the potatoes on a platter, then the pepper strips, sprinkle a little coarse salt and drizzle with 1 tablespoon of oil from the marinated cheese.
- Place the cheese balls on top, and crumble a few balls over the potatoes. Serve immediately.
