When I was little, my grandmother wouldn't let me leave the house without eating two fried eggs and a cup of milk. It had become a ritual. That was her guarantee that I wouldn't faint from hunger during the day. She knew she wouldn't see me until evening 😉 What she didn't know was that I was eating at the neighbors' whatever they offered me: donuts, homemade chocolate, bread with oil and sugar, bread with lard...

Ingredients

4 eggs
2 anchovy fillets (in oil)
1 tablespoon butter (about 15 g)
3 tablespoons oil
salt, pepper

Servings: 2

How to prepare fried eggs with anchovies

  1. Over medium heat, melt the butter with the oil in a pan until it starts to foam.
  2. Add the finely chopped anchovies. Fry for about 30 seconds.
  3. Crack the eggs into the pan and sprinkle with pepper and salt only if needed (check how salty the anchovies are). Cover the pan and let them fry for 1.5-2 minutes, until the whites are set.
  4. Remove the lid and with a spoon, baste the yolks several times with the sauce from the pan.
  5. Serve immediately with toasted bread.
