That was her guarantee that I wouldn't faint from hunger during the day. Ingredients
4 eggs
2 anchovy fillets (in oil)
1 tablespoon butter (about 15 g)
3 tablespoons oil
salt, pepper

How to prepare fried eggs with anchovies
- Over medium heat, melt the butter with the oil in a pan until it starts to foam.
- Add the finely chopped anchovies. Fry for about 30 seconds.
- Crack the eggs into the pan and sprinkle with pepper and salt only if needed (check how salty the anchovies are). Cover the pan and let them fry for 1.5-2 minutes, until the whites are set.
- Remove the lid and with a spoon, baste the yolks several times with the sauce from the pan.
- Serve immediately with toasted bread.
