Recipe: Scrambled Eggs with Zucchini

This was our breakfast today. Since yesterday I found some small and beautiful zucchini at the market and had a few farm eggs, breakfast practically came together on its own.

Ingredients

3-4 eggs
1 small zucchini
1 medium onion
a few sprigs parsley
2-3 pinches oregano
2 tablespoons oil
salt

How to prepare scrambled eggs with zucchini

  1. Cut the zucchini into small cubes. Finely chop the onion and parsley.
  2. Heat the oil and add everything from above. Sprinkle with salt and oregano crushed between your fingers. Sauté over medium heat until the zucchini is cooked (about 3-4 minutes).
  3. Beat the eggs with salt and 1 tablespoon of water/milk. Pour over the vegetables in the pan and stir gently until the egg is cooked.
  4. Serve immediately.
