Green Beans with Ground Meat Stir-Fry

Look at these beautiful green beans I found at the market! I made them every way over the weekend (boiled, roasted), and yesterday it was time for stir-frying. I had 200g of ground meat left over from yesterday's meatballs, so the recipe came together on its own. I added a handful of cooked rice on the side and dinner was complete.
Ingredients
400g green beans
200g ground meat (beef or mixed beef+pork; not too fatty)
1 teaspoon grated ginger
1 large garlic clove
chili
2-3 tablespoons oil
Sauce
150ml water (or chicken broth)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon dry sherry
a few drops of sesame oil
1 level teaspoon cornstarch
1/8 teaspoon salt
Servings: 2-3
How to prepare green beans with ground meat stir-fry
- Trim the ends off the green beans and cut them into 3 pieces.
- Mix the sauce ingredients together in a small cup.
- Heat the oil very well in a wok. Add the beans and stir-fry over high heat, stirring frequently, for 8 minutes. The beans should remain crispy - don't cook them longer.
- Remove the beans onto paper towels to absorb the excess oil.
- Remove most of the oil from the wok, leaving only about 1/2 tablespoon. Fry the grated ginger, crushed garlic and chili to taste for a few seconds (until fragrant).
- Add the ground meat and fry over high heat, breaking it up into small pieces with a spoon. Fry, stirring frequently, for 5 minutes.
- Add the sauce, mix well and cover the wok. Let it simmer for 2-3 minutes.
- Remove the lid and add the green beans. Stir so the sauce coats the beans. Adjust salt to taste.
- Serve immediately with rice.
