Recipe: Green Beans with Ground Meat

Simple Monday dinner. With this recipe, I'm reminding you of the Turkish spice mix which is very good in stews like this (definitely try the chicken and vegetable stew).

Ingredients

200g ground meat (I used pork)
500g yellow beans (round or flat)
1 large ripe tomato
1 tablespoon tomato paste
1 large onion
1/2 teaspoon Turkish spice mix
1/2 bunch parsley
salt, black pepper
2 tablespoons oil

How to prepare green beans with ground meat

  1. Snap off the ends of the beans and then break them into pieces.
  2. In hot oil, sauté the finely chopped onion until very soft (about 10 minutes). Add the ground meat and sauté until it changes color and the liquid it releases evaporates. Season with salt and pepper while sautéing.
  3. Add the tomato paste and sauté everything for 2 more minutes. Add the Turkish spice mix and stir well.
  4. Add the beans, grated tomato, chopped parsley, and 1 cup of water (it doesn't need to completely cover the beans; see photo below). Add more salt and pepper.
  5. Bring to a boil, cover, and reduce heat to medium-low. Simmer for about 40 minutes (check that the beans are cooked and if not, leave them covered longer; stir twice during this time). After this time, the sauce should be reduced. If it's still too liquid, remove the lid and let it reduce (about 10 minutes).
