Recipe: Oven Roasted Baby Potatoes

Last year my grandmother found me in the garden picking these small potatoes from a pile gathered there, and she came running to stop me from taking the potatoes meant for the pigs. She said they're too small and who has the patience to peel them, and she'd give me big, nice potatoes for cooking. I had trouble explaining that I like these when made in the oven and they look nice whole and tiny, and she finally understood... This year she remembered me and picked out a sack of small potatoes especially for baking in the oven.

Ingredients

1 kg baby potatoes (about walnut-sized)
1/4 teaspoon pepper
1/2 teaspoon sweet paprika
1/2 teaspoon finely chopped rosemary (fresh or dried)
1/4 teaspoon salt
chili flakes (to taste, optional)
3-4 slices of smoked bacon

How to prepare oven roasted baby potatoes

  1. Peel the potatoes, wash them, and pat dry with paper towels. Add the seasonings and mix well by hand to coat them.
  2. Put the potatoes in a non-stick baking tray, without grease, in a single layer. Place bacon slices on top.
  3. Bake at 250C (480F) for 45 minutes, stirring every 15 minutes so they brown on all sides. At the end, shake the tray so the potatoes get coated with the fat released by the bacon. Serve immediately while warm (they're not good cold or reheated).
