You surely know them - in our region they are also called cartofi rantaliti (sauteed potatoes).
Ingredients
1 kg potatoes
1 large onion (about 150 g)
1 level teaspoon pepper (1/2 teaspoon if you do not want them very spicy)
2 level teaspoons sweet paprika
1 teaspoon salt
9 tablespoons oil
How to prepare peasant-style potatoes (cartofi taranesti)
- Boil the potatoes in their skins. They are done when a fork easily pierces them. You can also cook them in a pressure cooker, they will cook faster.
* my potatoes boiled in 45 minutes on medium heat, but they were smaller potatoes. - Drain the water, let them cool and peel them.
- Cut the potatoes into smaller cubes, about 1.5 - 2 cm.
* potatoes cut into small cubes (that is how I prefer them) or even grated have a nicer appearance than normal-sized cubes - Fry the finely chopped onion in hot oil in a wide frying pan.
- When the onion is soft, add the seasonings and stir quickly.
* do not fry the seasonings for long, as the paprika becomes bitter. - Add the cubed potatoes. With a wide spoon, gently stir, mostly turning them from bottom to top so they do not get crushed.
Check for salt and serve garnished with parsley or with yogurt.
