Recipe: Boiled Potatoes with Herb Butter

It's a side dish you can order at any restaurant in Romania. The problem is that they're usually almost cold and full of water. If you're lucky, the herbs sprinkled on top are fresh and somewhat improve their appearance.

Although it's one of the simplest recipes because they're basically just boiled potatoes, with minimal effort they can have an exceptional taste. The herb butter works wonders.

Ingredients

1 kg potatoes (can be new potatoes)
2 tablespoons olive oil
3 slices herb butter
salt, pepper

How to prepare boiled potatoes with herb butter

  1. If using new potatoes, scrub them with a wire sponge. Then cut them in 2 or 4 pieces, depending on size. If not new potatoes, peel them and cut into cubes.
  2. Boil them in plenty of salted water. Cook over medium heat for about 25 minutes, but test them before draining to make sure they're cooked but not mushy.
  3. Place the hot potatoes in a bowl, sprinkle with salt and pepper to taste. Then pour the oil and place the butter slices on top. Shake the bowl so the potatoes get coated with the melting butter. It's better to shake the bowl, this way the potatoes won't crumble.
  4. Serve immediately with pieces of herb butter.
