Pasta with Yogurt and Spicy Sauce

Pasta inspired by Turkish manti. I cheated a little, I used store-bought tortellini, so it became a quick weeknight recipe.
Ingredients
150g fresh or frozen tortellini (filled with meat, parmesan, ricotta or spinach)
300g Greek yogurt
1 small clove of garlic
salt
Turkish Tomato Sauce
35g butter
1 tablespoon olive oil
1 teaspoon hot pepper paste
2 tablespoons tomato pulp (or grated tomatoes; or canned pulp)
1 generous pinch of ground cumin
a little dried mint
salt
Crunchy Topping
1 tablespoon peanuts (roasted; salted or unsalted)
2 teaspoons seed mix (I used a mix of flax, sunflower, pumpkin and sesame)
2 tablespoons chopped mixed herbs (a mix of parsley, dill and mint in whatever proportion you like)

How to prepare pasta with yogurt and spicy sauce
- In a large pan, melt the butter over low heat, then add the oil. Turn the heat up slightly and add the hot pepper paste and tomato pulp. Sauté the mixture, stirring often, until you see the oil separating (about 2-3 minutes).
- Add the cumin and stir briefly. Turn off the heat and crumble 3-4 dried mint leaves into the sauce. Adjust salt to taste.
- Cook the pasta in salted water according to package instructions. Drain and add directly to the pan with the sauce. Turn the heat back on under the pan and stir until the pasta is evenly coated and has absorbed all the sauce. Adjust salt to taste.
- In a bowl, crush the garlic and rub it with a little salt. Add the yogurt and mix well.
- For the topping, put the peanuts and seeds in a mortar and pound just until you have smaller pieces, but don't pulverize the peanuts. Grind black pepper and sprinkle a little salt (if the peanuts aren't salted), add the chopped herbs and mix.
- Divide the yogurt between two bowls and make a crater in the middle. Pour half of the pasta into the crater. Sprinkle the crunchy topping on top. Serve immediately.
