Recipe: Perfect Sunny-Side Up Eggs

If you like sunny-side up eggs with perfectly set whites and runny yolks, then you will love this method of preparing them. The eggs come out the same every time, without any frying smell in the kitchen and using a minimal amount of oil. I served them with confit peppers and toasted bread.

This was Valentine's Day breakfast. Since this year I did not have time to prepare dinner for Valentine's Day, I wanted at least breakfast to be special.

Ingredients

1-2 eggs
1/2 tablespoon oil
salt, pepper, chili

How to prepare perfect sunny-side up eggs

  1. You need to use a non-stick pan for these eggs, because not much oil will be used and not high heat, so there is a risk of sticking if the pan is not non-stick. For 1-2 eggs, a 16-20 cm pan is sufficient. Grease the pan with oil.
  2. Place on the small burner at low heat and crack the eggs into it. Season to taste with salt, freshly ground pepper and chili flakes.
  3. Leave the eggs on low heat until the white on the bottom is perfectly set (white), meaning you can no longer see the pan bottom through it. On top, the white will not be set and that is ok. It takes about 3 minutes. Do not rush this process, do not increase the heat to set it too much - we want just a thin film on the bottom to be set.
  4. Move the pan to the oven preheated to 160C for 3.5 - 4 minutes.
  5. Remove the pan and using a spatula, slide under the eggs and push them onto a plate. Done! I served them with confit peppers and toasted bread.
