For vegetarians, for those who want to taste the flavors of India, for those who want to prepare a curry in just 30 minutes and for those who are fasting, today I have a recipe based on Sun Kiss seasoning, given as a gift by Sonnentor on March 8th.
The seasoning is special because of its contents. Just imagine that besides turmeric, cumin, coriander, cardamom and many other Indian spices, it also contains marigolds, sunflower petals and cornflowers.
Ingredients
300g tofu in brine
1 onion
2 canned tomatoes
3 level teaspoons Sonnentor Sun Kiss seasoning
50ml coconut milk
5 parsley stems
3 tablespoons oil
1 teaspoon sesame oil
salt, black pepper

How to prepare tofu curry
- Blend the onion and tomatoes in a food processor until they become a paste.
- Heat 2 tablespoons of oil in a skillet and add the Sun Kiss seasoning. Fry for 5 seconds. Add the onion+tomato paste and sauté for 10-15 minutes over medium-low heat, until the paste becomes dry.
- Add 300ml water, coconut milk and ground black pepper to taste. Simmer covered for 20-25 minutes, until the sauce reduces well.
- Meanwhile, cut the tofu into cubes and fry in the remaining oil mixed with sesame oil. Fry until lightly golden, then remove to paper towels to absorb the oil.
- When the sauce is ready, add the tofu and finely chopped parsley. Stir and taste for salt.
- Serve warm with boiled basmati rice or naan bread.
