Potato Salad with Anchovies

This salad is a Mediterranean-flavored alternative to plain boiled potatoes. It can be served as a side dish or as a salad.
Ingredients
5-6 medium potatoes
4 anchovies or sardines (in oil or brine)
4 garlic cloves
1 tablespoon capers
1 tablespoon lemon juice
2 pinches pepper
2 pinches oregano
6 tablespoons olive oil
1/4 bunch parsley
How to prepare potato salad with anchovies
- Boil the potatoes in their skins or cubed in salted water. Drain. If you boiled them in their skins, peel and then cut into cubes.
- If the anchovies/sardines are in brine, remove the spine and place them in a bowl of cold water. Leave for at least 15 minutes to draw out the salt. Then rinse in several changes of water. If they are in oil, use them as they are.
- Put all ingredients except the potatoes and parsley in a blender. Blend until as smooth as desired.
- Put the resulting paste in a bowl, add the finely chopped parsley and 2 tablespoons of the potato cooking water (or 2 tablespoons hot water if you didn't boil them in their skins). Mix everything well and pour over the hot potatoes.
- Allow to cool and serve as a side dish. They are also delicious served warm.
